Ultimate Avocado on toast with a twist
A twist on a classic, you can either just have the avocado on toast, or go all out and pop the fried egg in like I tried, I dare you! It looks fab and tasted amazing I was a little cheeky and added in bacon, but just do whatever you fancy. Everyone has their own favourites at brunch.
2 avocados (mashed with lime and salt, coriander too if you have it)
chilli jam or chilli flakes
8 sourdough slices
4 small eggs
HOW TO MAKE YOUR egg in a hole avocado toast
1.. Brush the 4 slices of sourdough both sides, i just use my rapeseed oil but use whatever you have olive oil is fine. Fry in a pan and keep warm in a low oven. Cut the other 4 slices of bread and oil frying on one side only.
2. Flip the cut bread over so the fried side is up right. Crack each egg into the hole, cover the pan with a lid or baking sheet to ensure the whites set on top too.
3. To serve, spread the whole slices with chilli jam and the mashed avocado, with your egg-filled bread.
