Sizzling Chops with sweet tomatoes
A little inspiration for a last minute romantic meal for you and your loved one for tonight, such a simple easy recipe, goes down a storm and takes 15-20 mins tops, see below:
4 large lamb chops, trimmed of fat
a few sprigs of fresh rosemary (don’t worry if you don’t have to hand)
1 tbsp runny honey
2 tbsp balsamic vinegar, plus extra to serve
2 bunches of asparagus (600g) (in my pictures I missed this out- was on the side)
300g ripe cherry tomatoes
1 small bulb of garlic
300g fresh lasagne sheets
30g Parmesan cheese
Toss the lamb chops with a pinch of salt and pepper and pop into the frying pan with 1 tablespoon of oil, keep an eye on this and keep turning until golden (around 8-10 minutes dependent how well done you like them). Once they are golden brown turn the heat right down and dribble on your honey and balsamic vinegar. Make sure to turn your lamb chops over to ensure they are coated.
Trim and slice the asparagus (leaving the tips whole) and halve the cherry tomatoes. Pop them in the pan and add a tsp of oil. Cut the lasagne sheets into 2cm-thick stripes, scatter them over the veg, then cover with 500ml of boiling water and mix together.
Once the lamb has settled and is glazed with the dressing remove to a plate to rest. Finely grate the Parmesan over the lasagnetti and turn the heat off. Serve with the lamb, adding an extra drizzle of balsamic for effect.
