Chicken and Quinoa Stir Fry
This one is taken from Lean in 15 (thanks Joe) and has become a bit of a firm favourite of ours now, perfect with that Spring feeling in the air.
½ tbsp coconut oil
3 scallions, finely sliced (spring onions)
1 red bell pepper, finely sliced
½ courgette diced
1-2 chicken breast cut into thin pieces (1/2 inch thickness)
2 tsp smoked paprika
Pinch of salt, pepper
1 cup of cooked quinoa
¼ cup of feta cheese (crumbled)
Small bunch of parsley leaves (you wither love them or hate them)
How to make:
1. In a wok or large frying pan melt your coconut oil and on a low heat add the veg, heat them for 2-3 mins and allow to soften.
2. Increase the heat to high and add in your diced chicken and pop in your paprika and seasoning, fry your chicken until its cooked through this should be 4-5 mins.
3. Stir in the quinoa and fry until warm for roughly a minute, add to the bowl and squeeze with lemon, parsley and add the feta (some people are not always keen on feta or parsley so you could pop these on a separate dish for people to sprinkle on themselves – totally up to you).
