Easy Peasy Cupcakes

Baking is a must most weekends, but at Easter who cant resist a little extra treat and something to entertain the little ones for a few mins in between the madness and eating far too much!

These cupcakes are so simple and everyone should give them a try, I kept the recipe for both the cupcake and icing simply bit you can add or tweak this as you like.


For the cupcakes:

110g room temp butter

110g self-raising flour

110g caster sugar

2 eggs

1 tsp vanilla extract

1 tsp milk

For the buttercream:

100g butter

150g caster sugar

How to make:

1. Pre-heat your oven to 180, and line with cases, with a 12 cupcake baking tin.

2. I simply pop everything in the bowl in no particular order, mix until just combined then pop a spoonful of mixture into each case with the leftovers spoon into the cases that look a little emptier.

3. Pop in the oven for 12-15 mins (dont peep until near the end, helps with the rise), then let cool and pop on your buttercream and decorations.
