Weekly meal plan 7: Leftovers and Fridge remains
So this week’s plan is inspired by leftovers and making the most of ingredients and bits and bobs I have left in the fridge. Waste not want not is a motto my mum has drilled into me since I don’t know when!
A combination of the leftover weekends roast alongside a few veg that have seen better days in my fridge I’m determined to whip up a lovely weeks’ worth of meals.
With the hubby running the Brighton marathon there is a little bit of a carb overload excluding the Tuesday. However it is really high in protein so more than makes up for it.
Leftover roast chicken, making a Chicken and Leak orzo risotto
Beetroot and Goats cheese watercress salad
Sweet potato gnochhi
Chicken stir-fry and rice
Spag bol (the hubby’s running the Brighton marathon)
